
Now that November has arrived, we are well into pumpkin season. If you want, you can find pumpkin coffee, pumpkin muffins, pumpkin pancakes, even pumpkin pasta! Pumpkin is everywhere, and especially on the dessert table. If you're watching what you eat (and I hope you are!), there are plenty of ways to make a pumpkin dessert that will scratch your dessert itch without sabotaging your healthy efforts.
Here is a quick and easy recipe that will satisfy your sweet tooth! And with only 147.5 calories and 4 grams of sugar per slice, the indulgence is guilt-free.
Pumpkin Pudding Pie
1 cup canned pumpkin
2 cups skim milk
2 1.4 oz boxes of sugar-free instant vanilla pudding
1 9 inch pie shell, baked
1/4 tsp. ground cinnamon
1/8 tsp. ground cloves
1/8 tsp. ground cloves
Combine pumpkin, spices, milk and pudding mix until smooth. Pour mixture into pie shell and refrigerate until firm. Cut into 8 slices. Enjoy!
