My Journey to Healthy Eating

A few weeks ago, we took time to congratulate Michael Bell, a member of our Provider Relations department, on meeting his goals to live a healthier, more fulfilling life. We shared his success on Facebook, along with another incredible employee who committed herself to be smoke-free. Here at Liberty HealthShare, we want to encourage everyone, members and employees, to live a healthy life. After hearing Michael's story, we were so inspired that we asked him to share a few words about how his life has changed since the start of his weight loss journey.

"I often told myself that I wanted to lose weight and eat better, but my thoughts never proceeded my actions. Working 8 hours a day and going home just to “Veg” out only to be entertained by the TV, is what I did most days and the weight began to show. Climbing a few stairs and being out of breath was a total realization that I needed to change something. So, I made a resolution that I wanted to eat better and eat clean. I’m finding that labels do matter and what I eat counts. Preparing my food daily has taught me how to eat the good stuff and leave out the bad. Not only is this life changing but also rewarding as I begin to see the new me and feeling good about it."

Just like Michael did, making simple changes, such as preparing your meals ahead of time or reading the labels, can make a huge difference in your life. We are so excited to share more of Michael's story as he continues to pursue his goals. As a special treat, Michael has offered to share with us one of his go-to healthy recipes, and we cannot wait to try it.

Clean Eating: Heart Healthy Chili

  • 3 tomatoes diced Medium or Large
  • 1.5 lbs. of ground beef 85% or 93% less fat.
  • 1 cup of diced green peppers
  • 1 cup of diced onions
  • 1 tablespoon of Liquid smoke
  • 1 tablespoon of Braggs Liquid Aminos
  • 1 teaspoon of Sea Salt
  • 3 cans of Organic Kidney Beans 15.5 oz. ( usually has 1 gram of sugar per can and low sodium)
  • 1 can of tomato sauce 8 oz. ( no salt added)
  • 2 TBS Chili Powder

Seasonings to taste:

  • Black Pepper
  • Onion Powder
  • Garlic Powder
  • Red Pepper Flakes to give it a little kick (optional)

Cooking Preparation:

Cook the hamburger with the green peppers and onions. Draining the juice is optional after the beef is cooked. Add your seasonings and tomatoes, liquid smoke, liquid aminos and sea salt, kidney beans and tomato sauce. Put all into a Crockpot on low and cook for 30 mins. Serve with gladness of heart!
