Every December I spend a considerable amount of time trying to decide what resolution I am going to half-heartedly commit to for the new year. I run through the endless list of what I wish I could improve on, like my need to be near my phone at all times or my slouching posture. I have tried everything from reading more books to giving up Pepsi. Unfortunately, I have yet to do either of those. Finally, after careful consideration, I have decided to try something new this year.
For most of my life, meals have been prepared for me or I have opted for a quick, easy microwave meal or a fast food combo of greasy fries and a burger. This has resulted in me having an unhealthy relationship with food and the kitchen. When I start a recipe from scratch, I often find myself overwhelmed and reaching for something that instead requires minimal time and effort.
I've decided it is time to stop taking the easy way out! Over the next 12 months, I will attempt to re-create the meals found on various top-rated blogs and will share my experience with you - the good, the bad, and the ugly.
The goal of this journey is to overcome my lazy attitude towards preparing meals from scratch and, hopefully, enjoy the health benefits that come with that choice. I want to learn new tricks along the way, come away with a new perspective, and enjoy my time in the kitchen.
