Immune-Boosting Chicken Noodle Soup

It's amazing what a warm bowl of chicken noodle soup can do for a person when they are sick. Even just saying the words "chicken noodle soup" somehow magically makes the immune system perk up. After a few weeks of traveling, inconsistent sleep, and everyday stress, I was bound to attract any germs that were floating around waiting to attack a vulnerable immune system.

After three days of barely getting out of bed and walking around like a zombie, I finally decided to give my body what it was craving. I made myself an immune-boosting chicken noodle soup recipe that I believe gave me the strength it needed to start fighting against the germs that were bringing me down.

The recipe that I used was from and it was very simple to make. When I went to the store to pick up the ingredients, I knew I was not in the mood to cook raw chicken so I bought a rotisserie chicken instead. This is a great time-saver for any recipe that calls for chicken. To give my body the extra immune boost that it needed, I bought fresh ginger to throw in the broth along with some garlic cloves.

I started by shredding the chicken into bite-size pieces. I like the flavor that a rotisserie chicken adds to a dish but feel free to use whatever chicken suits your pallet. Then, I chopped up the carrots, celery, onion, and a couple sprigs of rosemary and tossed them into the pot. I finished by grating the fresh ginger and garlic cloves, poured two cartons of low-sodium chicken broth into the pot and gave it a quick stir.

My favorite part of making soup is that there are very few steps and minimal clean-up at the end of the day. Everything is tossed into the same pot and then you can just let it do its thing. When the soup was finished, I poured myself a big bowl and enjoyed every last bite. The next day, I felt like a brand new woman!
