Gluten-Free Doesn't Have To Be Boring

This Is For The Gluten-Free Folks!

I think it's safe to say that we all know at least one person in our life that has decided to follow a gluten-free or a low-carb diet. Many individuals who choose this path do so because of a medical concern but there are also those who see an overall health benefit to eating this way. I, myself, do not have a medical reason to eat gluten-free, nor have I adopted a low-carb lifestyle, but I do know there are members of Liberty HealthShare who do. In an effort to connect with all of our members, this recipe is for you!

Spaghetti Squash Chicken Parmesan

As someone who likes simple meals that take very little time to complete, this recipe was the best one yet! It took a little over an hour to make and was easy to follow. While the spaghetti squash was roasting in the oven, I sautéed the chicken and set it aside until I was ready to assemble the spaghetti squash "boat." My favorite part of the process was using a fork to create the "noodles" in the spaghetti squash. When you start scraping the inside of the squash, noodle-shaped strands start to form. I took the slices of sautéed chicken and placed them in the boat, topped the whole thing with marinara sauce, and covered the top with cheese. I put the pan back in the oven to melt the cheese and my chicken parmesan was complete.

For those of you who have not tried using spaghetti squash to replace traditional pasta, I will warn you that the texture the of squash is noticeably different than pasta. If you're like me though, taste wins over texture any day! I was not sure what to expect when I took the first bite, but I was very pleased with the finished product. It was delicious and I can't wait to make this recipe again.
