Cooking With Color

The winter blues are no joke. The sky is grey, the trees are bare and the constant thoughts about spring weather consume our days. Subzero temperatures, icy roads, and dreary weather are sure to bring even the happiest person down in the dumps.

So what can you do when you're stuck inside and feeling blue? Throw on an apron and get yourself in the kitchen!

This weekend I decided to make a delicious breakfast taco recipe and incorporate some color into the dish, including one of my favorites: red. I don't know about anyone else, but bright colors always put a little pep in my step. There is just something about the color red that gives me a sense of warmth and excitement. What a perfect way to cure my winter blues!

Per my takeaways from last week, I bought smaller/softer vegetables in order to avoid another unplanned upper body workout. However, cutting red onions in the morning was not one of my brightest ideas. I ended up looking like I had just watched six Nicholas Sparks movies in a row and, to make matters worse, there were no tissues anywhere in the house. I'll keep that in mind next time.

I added the peppers to a warm non-stick pan, shuffled them around until they were soft, and then added the diced red onions. Once the onions were cooked, I cracked several eggs into the pan, tossed in a few shredded pieces of kale, and scrambled the mixture until the eggs began to firm up. While the eggs were cooking, I prepped my taco shells, avocado, lime, and mild salsa. I chose to not use a serrano pepper because my taste buds have not quite graduated to that level of heat. I have often been called a wimp but this girl knows her limits.

I finished by stuffing the shells with the eggs and toppings and ended up with six tacos when it was all said and done. I enjoyed one with a tall glass of OJ for breakfast and froze the remaining five tacos.

The great thing about any kind of taco, whether it's for breakfast or dinner, is that you can be creative with the ingredients you choose and go to town! Packed full of protein and healthy vegetables, this also makes a healthy alternative for breakfast. I am really looking forward to enjoying these tacos over the next few weeks.
